Oh, avocado! Quite an unconventional fruit if you ask me.
So different from its peers that we, Humans, decided to consider it a vegetable. But it's not. It's a fruit.
Avocados have a different nutrient constitution: they are high in lipids. 16g per 100g, while the other fruits (except nuts, coconut, olive and cacao) have 1g or less.
They contain good fats though, so don't freak out and throw away the bunch of avocados sitting on your kitchen counter.
The avocado texture is quite unique among all the fruit: they are ultra-creamy when ripped. Compare that to your typical apple or orange.
To sum up, we can affirm that avocados are the fruit realm's weirdos.
And at Gritty Den ... we embrace weirdness.
Today's recipe could be used as an entrée or amuse-bouche.
To illustrate it, we used the second option cause we are so bloody posh. Weird and Posh.
Avocado's best pairing (non-exhaustive list): Tomato, lemon, grapefruit, chilli, seafood, cumin, onion, coriander, cream, capsicum.
Texture of the dish: creamy, tender, smooth, mushy, juicy
Taste: citrusy, nutty, buttery, sweet, umami, marine.
RECIPE FOR 4 MINI GLASS BOWLS OR 2 MEDIUM ONES

Ingredients
Shrimp and grapefruit mix
- 2 leaves of mint
- 1/2 pink grapefruit
- 90g shrimps (keep 6 of decoration)
- dash of cayenne pepper
- 1 tsp of Honey
- 2 TBSP of minced sun-dried tomato
- 1/2 tsp of balsamic vinegar
Avocado cream
- 2 avocados
- 1,5 TBSP of lime
- 1 TBSP of grapefruit
- 2,5 TBSP of coconut cream
- a pinch of chiles powder (around 1/8 tsp)
- 0,4 inches of freshly grounded ginger
- 1/2 tsp of coriander
- 2 TBSP of minced sun-dried tomatoes
- pinch of salt and pepper
Instructions
- Slice the grapefruit in supremes (removing the thin white skin to keep the flesh).
- Mince the sundried tomatoes and the shrimp. Add the supremes, vinegar, mint, honey and cayenne pepper. Reserve in your fridge for 20 minutes.
- Mix avocados, spices, lime and grapefruit juice, coconut cream, sundried tomatoes and salt
- Put first the shrimp preparation in your bowl, then the avocado cream, and garnish with 3 or 5 shrimp on top.
